Capsaicine

Capsaicine is an organic compound with the formula C18H27NO3. In nature, it exists in the solanaceae plant Capsicum annuum and its variants, precipitated from petroleum ethers as monoclinic crystals, rectangular sheets. It's an extremely pungent vanillamide alkaloid. Capsaicin is a white crystalline powder that is the active ingredient of the red pepper.
